According to Chinese culture (and a quick google search out of curiosity), the dragon is said to represent good luck, strength and power.
I hope this lunar year brings all of those to you all
Sending hugs

Interestingly my friend was telling me about some of the customs while we were walking through. Lots of stuff around preserving wealth and prosperity, and luck as @sinead276 said. Shops were also selling cabbage leaves on string, which I didn't have a chance to research!
I'll have to do some research on cabbage leaves and eat they represent. I know during Chinese New year and lunar new year sometimes families will often give their children red envelopes. The red colour often represents wealth, prosperity and good luck for the child's future and endeavors (I can't spell this word lol).
I love dragons, they're so cool! 🐉I wish they were real... actually, I take that back!
