Well, i dont know whether its just some muchrooms or all mushrooms (im thinking of amazonian ones here) go blue when you cut them if theyre wet, then when they dry they go a dark colour.

They will shrink because the moistures gone.

Sounds fine.

You dont want them turning blue, that is the oxydising (sp?) of the active ingredient, its a bad sign.
