Making your own pasta.

I'd really like to try making my own pasta. I don't have a pasta machine but I reckon it's possible to make lasagne sheets or ravioli, or even some tagliateli type stuff without one.

Does anyone have a recipe and a method for this?

    Its much easier with a pasta roller, you have to get the dough to become elastic and streched by running it time and time thru the roller. You can use a rolling pin if you prefer.

    You only really need flour (plain) some eggs and a pinch of salt. There is a recipe and method here.

    My tip would be buy some fresh pasta from Sainsburys, its quicker and just as good with some nice red pesto :thumb:

    if i remember correctly its 1 egg to every 100g of flour....and go_away told me to use 00 flour. But wait till she sees this, she will either confirm or correct me :p

    i got a pasta machine as a wedding present and used it once.
    Its a lot of hassle and no better than the fresh stuff from the chiller cabinet.

    much easier with a roller as it has to be very thin and its very hard to do it the right width without a proper roller. the pasta expands whilst cooking you see.

    Yeah, I think it's one of those things that isn't actually "better" homemade anyway so why bother?! It's not like homemade bread or cakes or cookies which are generally nicer homemade than bought.

    Sure, I might give it a go when I finish uni for the summer anyway, even if it is easier to buy it! :)

    I don't think i'd be that bothered about making my own spaghettie or macaroni or whatever. But would be nice to make my own ravioli. The vegetarian raviolis you see are all a bit 'samey'.

    Off the top of me noggin.

    Porcinni and cashew nut
    Walnut and feta
    Sun dried tomato, parmesan and basil
    chopped veggie frankfurter and mozarella

    I'd like to try it with sweet potato, and maybe small amounts of the quorn mince recipe I use for lasagnes and canelloni.

    Sweet potato sounds nice, or roasted pumpkin/butternut squash.

    yum, home made ravioli (without shrooms) sounds yummeh!
