roast beetroot with rice and horseradish

boil some white rice. cut beetroot into wedges, stick in a roasting tin with a few halved shallotts, pour over oil and balsamic vinegar, season, then roast for about 45 mins or so. mix some creme fraiche with some horseradish and season. then serve the beetroots and horseradish mix ontop of the rice.

i don't advise people how to eat meat :p ... but its a great thing to do with beetroots :)

Is there any way you could make a sauce out of the beetroot?
