if a thing of milk says sell by oct 31... does that mean it just has to be sold by then and it is still good? like could you still put it in your cereal on nov 2?

oh, and sniff it. If it stinks, it's generally off.
Your nose will have the answer to that question ... if you want to stop milk going bad for a few more extra days then you have to boil it to kill the bacteria that is in it .. also recommended for people with IBS.

Display until: the date the shop can sell the milk up until.
Use by: The date that the milk can be guarenteed to be good until. After that it may still be okay but its at yor disgrestion.

I once drank half a tall glass of milk before I breathed in and realised it smelt bad, it was only then I realised that it tasted funny too. I was nearly sick I tell ya.
