Haven't seen one of these threads for a while, and I've just finished a yummy lunch so figured I'd share.

Total prep time from opening fridge door to plate 25 mins or less.

A variation of pasta al'arrabiata.

Serves 2 generous portions.

Ingredients.

2 cloves garlic ( or cubes frozen garlic)
2 tea spoons chilli/ 1 chilli / 2cubes frozen chilli ( to taste)
1/2 onion, diced.
200g pasta
500g carton of passata or chopped tomatoes or sieved tomatoes
1 chicken breast, sliced into bite size chunks.
Fresh basil if you're feeling swizz, dried mixed herbs if not ( not the end of the world if forget
Cheese to serve if you like.

Instructions.

Fill kettle and set to boil
Put little bit of water into pan and put on hob to boil. Once kettle boils, add the hot water to the pan and bring back to boil ready for pasta.
Heat oil in pan.
Add chopped onion, garlic and chilli and cook until all soft.
Add chicken and cook until outside all White.
Add tomato, and then leave with lid on to bubble away.
Add pasta to pan of boiling water, cook for however long the packet says.
Add basil to sauce if you're using it
Drain pasta when cooked.
Pour cooked pasta into pan with sauce in and stir well.
serve onto plates.
