Gluten free baking

I have a friend coming to stay next weekend who has recently started a gluten free diet. We're planning to go out for a few walks and picnics and I'm struggling a bit with gluten free picnic food!

I normally make sandwiches and cake/biscuits. I don't want to splash out on loads of gluten free products, and I'd rather just use naturally gluten free foods if possible rather than buying substitutes.

I don't mind buying a bag of gluten free flour if anyone has a recipe that uses this, maybe for a cake or something? Also any hints on how gf flour behaves in a normal recipe! I was thinking maybe a carrot cake as they are quite moist already. I already have ground almonds in the cupboard if this helps!

Any ideas or experiences welcome!

Also if anyone can tell me whether there is gluten in baking powder?!
