Muffins

Yeah, i know, plenty for Mr G to get stuck into there.

Anyway. I'm baking muffins as we speak but i've never made them before. I followed the recipe and came out with a really runny goo. Is this normal ?

My carrot cake recipe makes a runny goo and that turns out ok.

    Houston - We have muffins.

    They've come out really well, though i think the heat for the oven in the recipe was too high.

    I can see this becoming an addiction.

    Cherry and coconut muffins

    Almond and apricot muffins

    They look yummy. I never make them from scratch I just use one of those mixtures where you add water and they usually taste ok.

    The best muffins come in a bag and you just add milk :p

    Actually the best muffins come from a bakery and you just add money. No clean up necessary with those either. :thumb:

    Muffins are nice :) don't make my own though. Often buy them in the newsagent with the milk for work. The world wouldn't be the same without a convenient muffin for tea break with colleagues

    I used half the quantities listed here as i only have a 6 slot muffin tin and as the recipe uses a lot of raising agent, not a good idea to leave it sitting about.

    Makes 12 generous muffins :)

    2 large eggs
    5floz/125ml oil (recipe says rapeseed, fuck that i used sunflower)
    2tsp vanilla extract
    4oz/110g Caster sugar
    4oz/110g brown sugar (i only had dark brown and thats too heavy so used all caster)
    9floz/250ml milk
    4tsp baking powder
    1tsp Biacrbonate of soda
    14oz/375g plain flour (you can replace 1oz/28g of flour with cocoa powder for chocolate muffins)
    7oz/200g of choccy chips (i used a mixture of plain/milk/white)

    Oven at 200c/400f/gas 6 though i thought that was a bit high but then ive got a fast oven.

    Put the eggs, oil, sugar(s), vanilla extract and milk in a large bowl and give it a damn good whisking so it's nice and smooth.

    Sieve in the flour, bicarb, baking powder and cocoa (if used) and give a good stir so its all mixed up

    Add 3/4 of the chips and stir with a spoon (if you use beaters you'll break the chips up)

    You should have a mixture like a thick batter mixture.

    Spoon the mixture into muffin cases so its about 1cm from the top (they roughly double in size) and sprinkle on the rest of the chips.

    Bake for 20 minutes(ish)
