    Ok.
    You need:-

100g butter, cut into cubes, plus extra for greasing,
    100g dark soft brown sugar,
    3 tbsp golden syrup,
    150ml milk,
    1 large egg,
    150g plain flour,
    2 tsp ground ginger (optional),
    2 tsp ground cinnamon,
    1-2 tsp ground all spice,
    1 tsp bicarbonate of soda,
    75g raisins (optional).

-Preheat oven to 150c/ 300f/ Gas mark 2. Grease a 900g/2lb tin loaf.
-Put butter, sugar and golden syrup into a pan and heat gently, stirring until melted. Add milk, pour into a jug and leave to cool, then add the egg (but it has to be really cool or the egg will start to cook once put into the jug, and it will scramble, and u don't want that)
-While waiting for the mixture to cool. Sift the flour, the ginger, cinnamon, all spice (depends on which ones you use) and bicarbonate of soda into a large bowl. Pour in the wet ingredients and gently mix together. Mix in the raisins.
    - Pour the cake mixture into the prepared tin and bake for 1 hour (50 mins for fan oven) or until a skewer inserted into the centre of the cake comes out clean. Turn onto a wire rack to cool.
    - I don't usually go by the total time I usually go by when I can smell the cake.

And if you want to change the cake into a Jamaican Ginger Cake then all you need to do is take out the All Spice and definatly use the Ground Ginger.
