start with pasta or baked potatoes.

add different things to them like tuna, beans, chilli....etc

gradually get more adventurous and experimental.

    Ok... Anyone can cook.

It's just a learning process really... Took me a while to learn some dishes. I can cook Mediterranean style and am trying to learn Indian style.

My diet is vegan (basically if it comes from an animal I ain't eating it or wearing it), so you could modify these to suit your taste.

    Tofu
Ok... I don't wanna sound patronising, but a lot of people don't know how to prepare tofu, so here's how I do it...

    Cut tofu in to cubes
But in a bowl/tub and cover with soy sauce
Add whatever else you like... I usuallyput chilli powder and lemon in
Leave from anything like 1-hr to a day, the tofu absorbs the flavour.

    Easy stir-fry using said tofu

    1 courgette
    handful of mushrooms
    Tofu (prepared as above)
    Noodles
    A bit of oil
    Garlic

    - Heat the oil in a wok... Chop the garlic real small and fry it. Don't use too much oil...

    - Once the garlic is a bit brown, put the tofu in and keep on cooking it until the sides start to brown...

    - Add the thinly sliced courgette and a few minutes later, the mushroom and cook until the courgette starts to go soft

    - Add the noodles (you can get these in packets ready for the wok, but personally I prefer rice noodles)

    - Stir for like... Two minutes

    - Serve up :thumb:

Or use sweet potato, which kicks ass too.

    Easy Jerk Casserole

(feeds up to 5 with rice and/or pitta, or can be stored in the fridge)

    You need....
    1 large sweet potato*
    Mushrooms
    1 red onion
    Olive oil
Wet jerk seasoning (not the dry spices)
    Casserole dish
    Tin foil

Preheat oven to gas mark 6... Chop the mushrooms and sweet potato* and red onion and put in the dish.

Stir in some jerk seasoning. In a medium dish, I'd recommend around 2-3 teaspoons, more if you like it hot.

Make sure all the veg is covered and drizzle olive oil over it.

Cover with boiling water, then put tin foil over the top, so that the shiny part is inside.

Cook for roughly 1 hour, then serve up!

    * Sweet potato can be substituted for new potatoes... Parsnip also goes well. Just be creative.
