Little sweet baby peppers

Former MemberFormer Member Posts: 1,876,323 The Mix Honorary Guru
I got some small sweet orange peppers on offer yesterday and I'd like to do something nice with them (not just chop up in a sauce) because I can't normally afford them. They are quite small, only about 3 inches tall and thin and there's only 4 of them so if I stuff them it probably won't be enough for 2 people. Anyone got any ideas for anything nice to do with them?

Cut them in half and deseed, but leave the stalk intact. Inside each one put a quarter of a peeled tomato, half an anchovie (optional), a little bit of chopped garlic.

Arrange in an oven-proof dish and drizzle some olvie oil over them and plenty of fresh milled pepper and roast them in the oven at 180c/Gas 4 for about 40-50 minutes.

Use as a starter with some fresh, crusty bread or side dish to a main meal.
