Salads

Does anyone have any good salad recipes?

I'm trying to eat healthy things at the moment so would like to make salads for lunch and stuff. I had a lovely one from Sainsbury's today :yum:

    Baby spinach
    Red onion (chopped very fine)
    feta
    Red pepper
    Avocado
    Cucumber
    Grated carrot

    I don't have any recipes, but heres what I like to make mine with
    half romaine/half spinich leaves, sweet onions, cherry tomatos, garlic croutons, raisens, shredded carrotts, green pepper, feta and a parmesan pepper cream dressing. Oh yes, thats what makes the salad :yum:

    Or switch the feta to chedder and a tomato bacon dressing

    I think, just throw a bunch of vegitables in with some lettuce (not iceberg, ewww with as much nutritional value as water :p) add a good dressing and voila. Good salad ;)

    Sometimes when I run out of things a salad with tomatos, onions and crutons suffices too.

    i like pasta salads so pasta with salad leaves, cucumber, red pepper, tomato and tuna drizzled in olive oil.

    I like grilled chicken salad

    People have different views on 'Salad'

    Cos my sister will say 'Oh yeah i had a pizza, but i put some salad with it' (which will be like a leaf of lettuce and some cucumber)
    Whereas my mum will just put loads and loads of these green leaves on the table and call that a salad.

    My good recipe would be

    Lightly grilled chicken in strips
    Cucumber sliced
    Red, Yellow and Green peppers sliced and diced
    Grated carrot
    Ice burge lettuce
    Grated cheeese
    Little bits of bacon
    Maybe a bit of beetrot ?

    salads are not really something you can follow a recipe for. I just tend to put what I fancy in big bowl.

    my favs are chicken caesar salad (not healthy though)
    chicken
    streaky bacon
    anchovies
    leaves
    croutons
    dressing (i make my own)
    parmesan

    Mix chopped red pepper, spring onions, mixed beans from a can, or any other veg you want. Mix in some pesto, a little olive oil and either sour cream, fromage frais or yoghurt to make a sauce. Put lettuce on a plate, put the mixture in the middle and top with croutons and plenty of black pepper

    To make croutons cut bread into small pieces and sprinkle with paprika. Spray with oil and bake until they are crunchy

    The dressing also makes a really good pasta salad

    in my lunch box today I had:

    1/5 th iceberg lettuce
    4 boiled egg whites
    2 grated carotts
    tbsp grated mature chedder

    Nice chicken strips with flavour on
    Mixed lettuce - it had allsorts in it, spinach, rocket, etc.
    Chopped spring onion
    A bit of pasta
    Cucumber
    Cherry Tomatos
    Low fat french dressing

    cherry toms are gross, all the rest sounds nice though. What was the chicken- cut of a roast or bought in a pack stuff?

    You're full of crap! Cherry tomatos are awsome :p I bet cherry tomatos and salad cream would be delicious ;) I swear I once had grape tomatos, they were even smaller than cherry tomatos. But they could have just been the reject tomatos and they labled them that to try to sell them. They were good too.

    na, I don't like raw tomatoes at all. Now, tinned tomatoes are another matter entirely. In fact, yes I will, I'll have tinned tomatoes for my tea, seeing as I had a lovely snack of salad cream on toast just now. Spiffing idea my_name.

    Calling it 'tomato' probably amounts to false advertising. Some would say that one upon a time, many moons ago they were actually tomatoes. Until they were forgotten, locked away from the world in a little tin eventually resulting in congealed crap vaguely resembling the shape of a tomato but otherwise indistinguashable. The chopped ones are great for making sauces though :cool:

    Mmmm that sounds lush...minus the lardons cos I'm a veggie.

    I don't tend to eat salds really, they just don't fill me up and I'm trying to put a bit of weight on at the moment!
    But if I do have one, I usually use mixed lettuce leaves (with rocket etc), cherry tomatoes, cucumber and whatever else is around. Usually top that with some grilled strips of halloumi and some mango dressing or something.

    You just ent eating them right. Get a tin of tomatoes (not chopped ones, plum tomatoes), open tin, pour into bowl, zap in microwave, salt and pepper, dash of cream, stir and eat with a spoon. goooooooooooooooood

    Does anyone have any good salad recipes?

    I find some cubes of cheese are nice in salads.

    A really simple Salad I like is medium cheddar cheese, cucumbers, and tomatoes all cut into the same sized cubes .. makes a good midnight snack ..

    I made a warm salad yesterday:

    Small jacket potato
    Fried strips of chicken in a teensy bit of oil with fresh chillis, onions, peppers and seasoning.
    Made my own gaucamole from scratch -so yum!
    Baby salad leaves
    Cucumber
    tomatoes
    etc.

    On warm days my mum makes a massive salad for dinner which is basically:

    Grilled chicken
    Iceberg lettuce with bits of rocket chucked in coz we're a fussy family
    Boiled new potatoes
    Sweetcorn
    Cherry Tomatoes
    Beetroot
    Grated Carrot
    Grated Cheese or cubes of mozarella
    Onions
    Cucumber and
    Boiled Eggs.

    Bit like a Nicoise salad but without the tuna and random other bits. So not really like a Nicoise at all. Anyways, its really filling and Lurvely, especially if you make a vinegarette for it :)

    I know and I think its nicer when you make it yourself :) I don't know quantities really.. I just add as much as I feel I need to and it makes enough for 2 people.


    1 very ripe avocado (you can tell it's ripe by squishing down the top and if it oozes or is really soft then it's ready)
    chopped tomatoes.. I use cherry and use maybe 5 or 6
    finely chopped onion (red or white).. maybe half a medium onion is enough.
    finely chopped fresh chilli (no seeds)
    handful of chopped fresh corriander
    squeeze of lime juice
    salt

    Chop and mash! lol. I guess you could whizz it with a hand blender or something but I prefer it a bit rough.

    guacaMOLE, love the stuff. My mum makes it herself as well, soooo nice. Goes with most things, good for dipping.
