1lb potatoes, peeled, grated and dried on a clean tea towel.
    Large onion grated.
Mix together with salt and plenty of pepper.
Put half into a large, non stick, buttered frying pan.
Cover the centre of the potato in the pan with grated cheese. Cheddar, Gruyere are best. Or Mozarella if you like it really stringy. (don't put any cheese round the edge or when it melts it'll dribble out and burn)
Cover with the remaining potato and press down firmly with a potato masher.
Fry for about 10 minutes each side on a lowish heat.

Simillar to latkes only different! You know what I mean.

    Potato Latkes

    6 large potatoes
    2 beaten eggs
    4 tbsp self raising flour
    1 tsp salt
    pinch of pepper

Grate the potatoes, put in a colander. Pour over boiling water from the kettle and leave it to drain for about 10 minutes. Then put it in a bowl and mix in all the other ingredients. Heat about a cm of oil in a frying pan, and when it's hot put in dollops of the mixture, about a tablespoonful, flatten it with the back of a spoon. Cook them on a mediumish heat, about 5 mins each side till they're brown. Drain them and eat them at once, they're disgusting cold!

Kaffrin will try to tell you they're called plackis. Don't listen to her. They're latkes!

A pre-packed soya based meat replacement type thing. Get it in Bolognaise, Chilli, Mince and Onion flavours. Couple of others too i think.
