Over the course of the day, our bodies gradually, slowly start preparing to go to sleep at night, and that is done mostly by releasing the melatonin hormone which helps us sleep (and also regulates our sleep cycle for better quality sleep). This is usually affected by perceiving light changes in the environment - that means the darker it gets the more melatonin is released, which means the more the sun sets in the evening the more tired we feel.
However our screens also emits light which can affect those hormones, mainly blue light. Therfore watching screens late in the evening can cause our brains to release less melatonin making our body think its still not time to sleep and keep us awake/make it harder to sleep later. Which is why devices often have a 'blue light filter' that you can turn on to reduce the blue light you get from the screen, although that only helps to an extent (but its better than nothing).
I hope this helps understand it! And if I got something wrong then somebody just correct me
