pasta/rice salad - recipes anyone?

I need to get some recipes for stuff like pasta salads and rice salads in this warm weather.
Im not vegetarian, but vegetarian recipes are fine too, as well as meat and fish.

    I quite like something simple; pasta with pesto, rocket and spinach. Yum. Don't use pasta shells or the pesto collects in the shell and it's too strong, fusili is best. Oh, and don't forget to flake some parmesan on top. :yum:

    You can add whole tomatoes if you like, but I can't eat them.

    all the usual with a bit of fruit added ...sultanas apples whatever.

    What I usually do for bbq's etc is rice, red peppers, sultanas, pineapple, a splash of the pineapple juice and a splash of some kind of salad dressing containing things like orange and/or honey.

    erk, parmesan, a great way to make dinner taste like feet.

    chicken and bacon, cooked, cold, in a salad, that's tasty.

    rice with chickpeas, kidney beans and vinegarette dressing, mmm!

    also like sundried tomato dolmio stir in on rice and left to go cold with lettuce :yum:

    Spaghetti with pesto and creme fraiche (little bit of garlic puree) with onions, mushrooms, corgettes, bacon and red pepper. Absolutely delish. :thumb:

    Rice dish:
    Morrocan style: cook some lamb, dried apricots (cut up) and some roughly chopped fresh mint in some stock then mix with rice when cooked.
    You could also add some almonds or something similar as well if you wanted

    Pasta dish:
    Cook some nice sausages in under the grill until ready, whilst these are cooking, poor a tin of chopped tommatoes into a pan and add some fresh basil, worchester sauce, chopped mushrooms, chopped onion and maybe a little tobasco sauce or chilli power. Let these stew on a low heat in the pan for a bit then when the sausages are cooked - chop up and add to the rest of the ingredients. (then mix with cooked pasta)

    I did rice with boiled eggs chopped, tuna, sweetcorn, peas, red peppers, baby plum tomatoes, spring onions and soy sauce in the end. It was yum.

    Gotta say I'd prefer the feet. I don't even like parmesan on somebody else's plate. That smell ... Yuck!

    Agree about the paella. I cooked my first one last week. Despite having practically none of the ingredients. I had to substitute the mussels, pancetta and prawns with a can of tuna and some ... er, sandwich ham. Was surprisingly edible.

    I cooked some pasta, shallowed fried a slice caugette and then tossed in a bottle of Aubergine Pesto as easy and tasted good.

    Cous Cous is good for cold salad's, though I dont have a specific recipe to give you.
