Fried rice....

Didnt know where to post this, so here goes.

Anyone got a step by step guide to making paerfect chicken fried rice....

I always make it too soggy or too bland.

Must be some crucial tips out there. Cheers.

    Sit back and relax
    As soon as doorbell rings, panic realising you havent got any money to pay the delivery guy.
    Switch all the lights off and pretend youre not in.
    Call up a chavvy mate (everyones got one)
    Ask them to rob the delivery guy as he goes back to his car
    Get them to bring you the fried rice.
    Eat fried rice and wait for the police to come and arrest your friend.

    Job done :D

    Assuming that you don't call the Chinese, the key to fried rice is that the rice needs to be dry after you cook it. So leave it overnight to dry out, make sure it isn't just resting in water. Then when you come to fry it, make sure your wok / frying pan oil is hot, throw the chicken in to get it browned, then fry up your rice and whatnot. If you throw in an egg it should break up fairly well.

    Probably helps if the rice isn't too starchy, too.

    cheap long grain rice is best.
    easy cook rice is even better for you iunskilled folk ...seriously.
    cover the rice in two inches of cold water.
    bring to boil.
    don't let it boil for more than seven minutes ...seven being ideal.
    drain off water using colander or sieve and leave to sit for ten minutes ...run a fork through it a couple of times.
    bit of oli or butter or fat ....heat ...chuck rice in.
    small ammounts are easier to fry rather than a big pile ...you need room to stir it.
    for chinky style ...chuck in a few peas ...bacon bits ...prawns couple of eggs
    finnish off by stirring in some soy sauce ...purrrfect.

    Oh but it does, Chris makes a gorgeous chicken fried rice.

    To start with have bowls of the following ready...
    1.To start the chicken should be pre grilled (or however you cook yours).

    2. Onion chopped and already fried.

    3. Peas and sweetcorn in bowl ready.

    4. Put 2/3 eggs in the pan and mix them up let them cook like am omlette but brokens bits. Once cooked take them out and put in a bowl.

    5. Boil in the bag rice cooked as per packed then drain.

    Olive oil in pan, put on med high heat. Once pan nice and warm, put the rice in with it. Chance from high to high med as needed. The rice will start to turn golden brown, add more olive oil if needed. Once rice has started to go golden brown put everything else in to warm through.

    use basmati. soften the rice by half boiling and then steam it until its cooked.

    don't get the stars cos they is a pain in the arse to grind but ...anise is seriously chinky flavoursome.

    when i make chicken fried rice, what i always do is:
    - boil some rice. or if easier, use the sachet stuff (can be just as nice!!)
    - fry up some chicken breast pieces in the wok until brown.
    - whip up some omelette mix with 2 eggs and then fry that in the wok until done (then get some scissors and cut it all up into small pieces!!

    add all 3 into the wok as well as whatever vegeatables you wish to add. (i add sweetcorn, pepper, onion, garlic + peas) and then stir until niiice and brown and hot

    gooorgrous :D whenever i do it, it turns out just right! mmm might have that for dinner actually..

    My cousin does it really well, but he always uses rice he boiled the day before and kept ready
