Leftover Turkey Curry!

We have this enormous turkey which could be made into soup (and more and more soup!), and make countless sandwiches. Instead I went and looked around on google and found Leftover Turkey Curry.

The good thing about this recipe is you could use powdered ginger instead of fresh, cinnamon stick instead of cassia bark and adjust the heat threshold to suit your taste. Use vegetable oil though ghee would make the curry a lovely yellow colour and give a richer taste. You are bound to have some onions. All you need is two and if you don't have a packet of tomato passata, a tin of tomatoes will do nicely. Reza's recipe looks straightforward and having something Indian will make your leftover Christmas meat look and taste more interesting.

What I'm going to do is make this curry a little milder, add some double cream and a tablespoon of ground almonds in with dollops of yoghurt. Either way this recipe will come out good, using what is left in your kitchen, plus any leftover turkey. If you have cooked chicken, beef or even leftover lamb, I reckon Reza's curry will come out tops, and you'l have a nice hearty curry to chase away the cold weather.

    tweaked the recipe a bit but made this today using my leftover quorn roast and it was delicious! thanks for the recipe Belle :)

    Sounds tasty, Bubbles. Are you veggie by the way? If so, I might find some super veggie recipes we gobbled over Christmas!
