Baking inspiration!

Former MemberFormer Member Posts: 1,876,323 The Mix Honorary Guru
So I thought we could have a baking inspiration thread, where people post pictures of the stuff they've made and link to recipes (if online). How does that sound?

I spent agessssssssss deciding what to make tonight, but ended up making brownies.

Yeah alright I think! Although I always find it hard to know when they're done - I hate it if they get too dry, but they tend to firm up when they cool so it's a bit of a guess. Still waiting for them to cool down completely. Will have to try out your recipe sometime! Although I do find brownies expensive - I spent over £7 in the shop getting ingredients, and that was just the extra stuff like chocolate and eggs which I didn't have in the cupboard. (But it was a corner shop.....)

These are the easiest, nicest cookies ever: http://allrecipes.co.uk/recipe/12839/vegan-peanut-butter-cookies.aspx

Also, there's a vegan cheesecake I make with vegan ice cream, tofu, and a wholeeee packet of hobnobs. I can't remember the exact amounts, but next time I make it I'll post them. It's lush!

brownies are tricky because they need to be squishy in the middle without being underbaked. if you bake them for too long then they are just a dry chocolate cake.

the other day i made cookie bars and everyone said they were lush

ohh omg hi do you have a recipe? they look gorgeous!

it's my normal cookie recipe just pressed into a square tin.
    100g margarine
    100g dark brown sugar
    1 tablespoon golden syrup
    1 teaspoon vanilla extract
    150g self-raising flour
    plenty of chocolate chips

cream together the marg and sugar so it's all fluffy, then stir in the syrup, vanilla and chocolate. add the flour half at a time and just mix it until it's all together. if it's a bit too dry then add a bit more syrup.

if you want a chocolate cookie dough then replace about 25g of the flour with cocoa powder.

i use a square tin and bake at 180 degrees for around half an hour (my oven isn't fan assisted), but keep an eye out to see if it's done. it needs to be firm on the top and golden around the edges. let it cool then cut into rectangles. it's fine if the biscuits seem a bit underdone because they'll firm up when they are cool.

Not the best picture, but I made brownies :) Never made them before, or even tried them, but according to the non-vegan boyfriend they taste pretty good despite the lack of eggs :d

I can't take credit for making the above creation but it was for me today from my friend. It is a giant cupcake in the middle surrounded by individual 'tea cup' chai latte cakes. Because I love tea and cake.

Looks so yummy. Do you have the recipe for the chai latte cakes?

Yellow- I'm having a go at the orange and white choc cake today! But am armed only with a sandwich tin. We shall see how it goes..
