I feel like such a fail that I'm 20 and don't know the answer to this / can't work out the answer on the Royal Mail website.
Do I need more than a first class stamp to send a letter in a big envelope? (A4 sort of sized).

An A4 envelope will need a large letter stamp unless it's heavy or very padded, in which case it may be a packet.

You can tell if it's a 'Large Letter' stamp because it's got large letter written on it. You can use any stamps you happen to have handy to make up to the right value - so if you put two 2nd class stamps on a light weight large letter and write 'First Class' on it then you'll get it sent first class.
