So, this one's for the back to uni crowd... what easy, but tasty (and maybe even nutritious ;)) recipes do you swear by?

Mine is Tivall veggie sausage pasta... :d

Ingredients - a box of Tivall or other hotdog style veggie sausages
A bag of pasta - preferably tricolore fusili (sp?) style (think personal preference here)
Mixed herbs and optional spring onions
Mayo (yes, I do mean mayo)

Boil pasta
Boil sausages (they take like two mins)
Slice sausages
Add mayo and mix herbs
Mix altogether (pasta, sausages, mayo and sliced onions).

Done.

I promise you it tastes better than it sounds. :razz:

    I really hope it taste better than it sounds.

    Here's mine.

    Ingredients:

    Pasta (and kind)
    Passata (aka squashed tomatoes)
    Dried mixed herbs
    1 drained tin tuna
    Frozen peas
    Optional - cheese

    Cook pasta as per instructions on the packet
    4 mins before end, add frozen peas to pan
    Drain - don't pour pasta and peas down sink
    Add passata to pasta &peas in pan (so it looks like you've got the right quantity of sauce)
    Sprinkle with mixed herbs
    Add tuna

    Stir well in pan.

    Serve onto bowl/plate.
    Grate over cheese if desired
    Eat.

    Much tastier, cheaper and more nutritious than the equivalent you get in a packet.

    Ahhhh loving this thread.

    I pretty much only cook easy recipes :blush:

    Mine is probably pitta bread pizzas for when I get bored of sandwhiches....

    Pitta bread, tomato puree, sweetcorn (and other toppings of choice) and cheese. Zap in microwave. :D

    Boil pasta.
    Dice a red onion and a tomato.
    Add red onion, tomato, tin of tuna and loads of mayo to pasta.
    Season.
    Eat!

    Posh - and piss easy.

    Ingredients

    Chicken breasts
    Bacon
    Courgette
    Onion
    Other veg
    Baby new potatoes

    Take chicken breast, wrap in bacon, losely wrap in foil, place on baking tray.
    Chop courgette (the round slice way), chop onion into 1/8th's, place on baking tray.

    Put baking tray in oven, 180 degrees ish, for 40 mins*. You need to have no pink juice from chicken at the end.

    Place potatoes in pan of boiling water - take about 15 mins.

    Serve - to guests who think you're a culinary genius.

    * If you preheat the oven, it takes less time.
    ** If you want to reach culinary goddess status, at start, slice chicken breast almost in half and put cheese inside.

    Lamb balti:

    1. Pick up telephone.

    2. Call 1-800-TASTY CURRY and ask for a Lamb balti to be delivered.

    3. Pay pleasant Pakistani man when he delivers it.

    4. Eat.

    5. Go bankrupt after two weeks.

    Egg fried rice with vegetables. (1 person)

    You need:
    Enough rice for one person
    1 egg
    Soy Sauce
    (optional mix veg such as peas, carrots, broccoli etc)

    Boil rice
    Heat largish non-stick frying pan with oil in when the rice is nearly boiled. Fry veg.
    Add rice and fry for a few minutes.
    Move rice and veg to one side of the frying pan to make space for the egg.
    Break egg into pan and let it begin to turn white before mixing in with rice and vegetables.
    Continue mixing until egg is thoroughly cooked through.
    Serve.

    Can be eaten on its own or with a sauce and either hot or cold.

    White fish with tomato sauce.

    Coley/white fish 8-10oz
    1/2 an onion
    1 clove garlic
    1/4tbsp flour (to thicken)
    1/2 tbsp tomato purée
    small tin tomatoes
    1/8 pint white wine

    1. Fry onion and garlic
    2. Add in tomatoes, purée, white wine and some flour if needed.
    3. Simmer for 12-20 mins medium heat
    4. Add in fish, simmer on a low light until cooked

    Herb Risotto

    1 tbsp olive oil
    1/2 onion
    1 chopped garlic clove
    250g rice
    300ml veg stock
    50g margarine
    dill, parsley, chevil, salt and pepper.

    1. Fry onion and garlic
    2. Add in rice and hot veg stock, leave to absorb.
    3. Stir in Margarine and herbs
    4. Serve

    Couscous with red onion and herbs

    250g couscous
    600ml veg stock
    2tsp veg oil
    1 avocado
    1/2 lime
    2tbsp fresh coriander (or dried)
    2tbsp fresh mint (or dried)
    1 red chilli
    1 red onion, finely sliced

    1. Place couscous in a large bowl and add stock, cover and leave to soak in
    2. Fry onion and when finished, add to couscous
    3. Add avocado, lime juice, fresh herbs, chilli and mix, then serve.

    And now I'm really hungry.

    Risotto cakes

    I made these last week, and they are to die for. Although risotto isn't exactly easy, the cakes are.

    You will need

    Cold, left-over risotto.

    Breadcrumbs. If you have a food processor just bung a couple of stale slices of bread in and whizz till crumby or use frsh bread and leave, spread out on a plate, to dry. Stale/dry breadcrumbs = crisper risotto cakes. If not, use the shredder side of a grater (the side that looks like little stars). Easier with stale bread.

    Couple of eggs and/or milk.



    Beat the eggs with a little milk and place in a shallow bowl, or just use milk.

    Form the rissotto into burger shapes, press firmly so they don't fall apart.

    Cover thoroughly in the egg/milk then cover thoroughly in the breadcrumbs.

    Fry for about 2-3 minutes each side in a hot pan.

    My housemate has just made rice, pepper, hot sauce and peanut butter (yes, really) mixed together, I am officially disgusted! haha

    Going to try some recipes in here this week, hopefully should have my own to add in future!

    Sweet sticky glaze for sausages.

    Spoonful each of ketchup, and honey and a sprinkle of chilli powder to taste.

    Grill sausages, pour over mixture and heat through. (I suppose you can add the mixture to raw sausages and cook but ive never done it that way)

    I used to make super-lazy 'satay' with crunchy peanut butter, curry powder and sweet chilli sauce. It's not all that bad!

    bit of a not as simple one but it's the first thing i learnt to properly cook :D

    you need (this is for 2 people):
    2 x chicken breasts
    100g chorizo (cut into cubes)
    100g feta cheese (cut into cubes)
    100g mozzarella (cut into thin slices)

    tin of chopped tomatoes
    1 onion (chopped finely)
    a few mushrooms (chopped)
    half a courgette (chopped)
    half a red pepper (chopped)
    4 or 5 fresh tomatoes (de-seeded and chopped)
    mixed herbs (a few tsps)
    oragano and basil if possible too
    red wine (good few glugs)

    start with the sauce. fry up the onions in some olive oil til they are soft, then add all the other fresh veg (it's all optional, you can just use tomatoes and onions if youre boring :p) and the herbs and cook until they are tender and a bit mushy. add the tinned tomatoes and the red wine and let it simmer for a good half an hour.

    while it's simmering get your chicken breasts and slit them with a sharp knife so you can stuff them. mix together the chorizo and feta and put as much of it in the chicken as possible, though it doesnt matter if there's some left over. lie them in a casserole dish and then cover them with the sauce that has been simmering, pouring all over and around. if there is left over feta and chorizo then sprinkle over the chicken and sauce. then cover this dish with tinfoil and put in the oven for 30 mins on 180 degrees (mine's fan assisted).

    after 30 minutes, remove the tin foil and lay the mozzarella slices on top of where the chicken lies. pop back into the oven for a further 10 minutes and put it up to 200 degrees.

    remove and have with pasta, or i like to do some mash/new potatoes and stir fried veg :D

    the chicken with have all yummy stuff inside and melty cheese on top :D

    obviously you can vary the recipe by putting anything u like inside it, like pancetta or bacon or any kind of meat! or without meat and just lots of cheese. yum. :)

    Bacon.

    Take bacon out of packet, put it on a microwaveable plate.

    Put it in microwave for 60-120 seconds (check after 60 seconds how its getting on, this will depend on the power of your microwave oven).

    The the bacon out [caution hot] and dab it off on some kitchen towel.

    You now have delicious cooked bacon. Somehow bacon ignores the 'everything that's microwaved turns to rubber' rule. You can microwave it for longer to get it very crispy if thats how you like it.

    Okay, that's what we call 'em in Canada. Any big, juicy and delicious sausage will do. Fry it nicely and put it in a fresh bun (toasted is good). Top with mustard, onions, sauerkraut or dill pickles, etc. Baked beans, coleslaw and crisps are delicious on the side.

    A chili dog is good, too.

    Get a slow cooker people. Means you can throw stuff in before work and it be ready for when you get back.

    Stews are easy, you pretty much throw it all together and it always tastes good.

    The big concern I've had with slow cookers is how well they cope with portions for one. I've read that they tend to produce 6-8 portions or something so that put me off.

    Just get a smaller one, refrigerate anything you leave for the next day.

    yeah we have a small one. i made curry yesterday in it for the first time and i got two portions out of it. i guess it depends on how much you chuck in too.

    Bonfire Bangers

    You will need

    Sausages, veggie ones work well too

    Apples, preferably eaters. Bramley's would work but you might have to put too much sugar in.

    Onions

    Sugar, soft/dark brown prefferably but caster is ok too.

    A little oil


    Heat the oil in a frying pan and lightly brown the sausages all over. While doing that, cut the apples into 8ths (skin on) and the onions to a simialr size to the apples pieces.

    When the sausages are lightly browned, add the onions and cook for a further 2-3 minutes until the onions begin to brown, then add the apples.

    Cook for a further 3-4 minutes. keep everything moving around so it cooks/browns evenly then sprinkle a couple of tablespoons of sugar over every. Give it a good stir for another couple of minutes.

    Good with a baked spud or in a bun.

    Tonight I made vegetable hot pot in my new saucepan. It was really easy and quick.

    Oil/fry light
    one packet pre chopped stir fry vegetables (frozen)
    two tins chopped tomatoes
    can of chick peas
    one vegetable oxo cube
    dried chilli flakes, to taste
    dried herbs e.g. oregano, basil, thyme
    fresh herbs if you have any e.g. rosemary, thyme, parsley
    black pepper
    grated cheese to serve

    Put a bit of oil or fry light in a saucepan and cook the frozen veg for about 8 minutes. Add chopped tomatoes, chick peas, oxo cube, herbs, chilli and black pepper. Simmer for about 20 minutes. Put in a bowl and cover with grated cheese.

    It's very easy and minimal effort as the veg are pre cut up and is very tasty.
