who has got a tried and tested recipe for this that they can reccomend?

Also, where is Rubberskin these days?

    for mushroom risotto i tend to eyeball it. an onion about 300g whatever mushrooms you fancy. cook the onion in a considerable amount of butter, add mushrooms (can be sliced, quartered or if you fancy left whole) and cook until they give off that yummy mushroomy smell, add rice and cook until shiny and translucent, add white wine and reduce by two thirds. Then add a ladel of stock (i prefer to use chicken stock, but use veg if you prefer), keep adding stock ladel by ladel and reduce until the rice is cooked al dente (with a slight bite). Season and then stir a handful (or so) of fresh grated parmesan. and there you have a decent mushroom risotto.
