When you have cheese like this

Do you usually eat all of it or cut off the white waxy outer layer?

I like that outer edge on edam cheese, not so fond of it on French cheeses though

I always thought that was there to seal it from the air.

Anyone know what the difference between Brie and Camambert? They both taste the same and look the same and they're both French.

Brie is made from goat's milk, Camembert from cow's.
