Anyone with experience participating in interviews for vouchers?

For these reasons, we'd suggest using a service and looking out for research opportunities specifically designed for adults. A good starting point would be Side by Side, a mental health support community run by Mind for over 18's and you might find some similar opportunities over there with them.
