Hmmm... Kind of following up on my last food thread.

We're a couple of girls, and cause of different reasons all prefer to celebrate new years eve in calm, casual but nonetheless cosy way.

This exclusive event (got to convince ourselves somehow, that we are not boring loners) will probably take place here.

Now, dear people, I would appericiate dearly if you had some ideas for some easy yet special food which could be prepared.
As I have been abandoned by my mom (exagerrating a teeny tiny bit), and am severely handicapped (same explanation as in the bracket above), this needs to be really easy.

I am planning on getting the girls to help me, but I am the one who needs to set up "the plan".

We have lots of meat, and I now know how to make rice (just need to find a way to flavour it). But any specific kind of apetizer/salad/desert/ anything which you had suggestions for?
I would be dearly and sincerely thankful for any suggestion, as I probably shouldn't have volunteered to have it here, but did so anyways.

    Chickem Tikka Masala maybe, everyone luuurrves that...?

    Ingredients

    4 skinless, boneless chicken breasts, cubed
    2.5cm/1in piece root ginger, finely chopped
    2 garlic cloves, finely chopped
    1 tsp chilli powder
    salt and freshly ground black pepper
    2 tbsp chopped fresh coriander
    juice of 1 lime
    2 tbsp vegetable oil
    1 onion, finely chopped
    1 red chilli, seeded and finely chopped
    1 tsp ground turmeric
    300ml/10fl oz carton double cream
    juice of ½ lemon
    handful fresh coriander leaves, to garnish
    pilau rice or table top naan, to serve
    Method

    1. Place the chicken in a large bowl and mix with the ginger, garlic, chilli, salt, pepper, coriander, lime juice and one tablespoon of the oil. Set aside for 2 hours.
    2. preheat the grill to high. Thread the chicken on to skewers and cook under the grill for 12 minutes or so, turning frequently until well browned.
    3. Meanwhile, heat the remaining oil in a large pan and cook the onion and chilli for 5-8 minutes until dark golden. Add the turmeric and cook for 30 seconds. Stir in the cream and cook gently for a couple of minutes.
    4. Slide the chicken off the skewers and stir into the creamy sauce. Simmer for 5 minutes or so until the chicken is cooked through. Check the seasoning, adding some lemon juice to taste, and serve with rice or naan. Garnish with the coriander.


    Despite what it may seem thats dead simple...no?

    Not that I'm a dab hand in the chicken (Jamie Oliver would eat his hat if he saw me)

    Chicken Sweet and Sour Stirfry - Doesn't take long at all, I cooked this last night for 4 people:

    Open a bottle of wine, drink continuosly whilst:

    * Fry chicken until cooked
    * Add Sweet/Sour Vegtables - Fry some more
    * Add sauce - stir some more
    * Add noodles
    * Serve

    ... then fall over, takes about 10 minutes!

    Alternatily, Beritos:

    * Fry mince
    * Add Berito sauce
    * Chop up some salad (lettuce/Tomatos)
    * Grate some cheese
    * Microwave Berito's
    * Serve (everyone can build their own Beritos)

    Takes about 15 minutes... always a winner!

    Spag Bol is very similar to the above, minus the salad, but cook spagetti too :)

    Mix turmeric, mild chilli powder, coriander (a bit) and cumin with some creme fresh (a little tub does for about 2 people.

    Not sure about spice quantities...I just put enough in... *shrugs*

    Cook the chicken pieces with the sauce.

    Cook the rice with a bay leaf.

    It turns out to be a curryish thing.

    Now I will be even more of a bitch, and say that I gave it a thought and will probably stick to a vegetarian meal.

    Vegetable chow mein stir fry type thing....eeeeeaaaaaassssssyyyyy peasy.

    Get a wok.
    Put some oil in the wok.
    Season.
    Put the vegetables in.
    Stir Fry.

    -To add to the wok 1 vegetable stock cube, 2 table spoons of soy sauce, 500ml of water, 2 table spoons of wine vinegar all mixed together.

    Put in with the vegetables.
    Wait untill lliquid has reduced and thickened.
    Add with the soft noodles that you have cooke din the microwave.

    go to tesco's and buy some kebabs (the ones on cocktail sticks) and shove them in the oven, they are lovely!

    also get some cheese + chive dip with chilli flavoured crisps!

    green beans + garlic + vinegar + lettuce and some other stuff for a nice salad - a little bit of olive oil but not much because it makes it go oily and nasty if you use too much!

    home made chicken soup is nice but you need to put it in a big thing for about 24 hours and let the chicken slowly cook. add other stuff to taste.

    thats all i can think of for now......

    Bean Chilli and Nacho's

    You will need: Red Wine, 2 Onions, Garlic Cloves, 2 Peppers, 6 Small Tomatos, 3 Tins of Kidney Beans, 1 tin of tomato paste, soy sauce/black pepper/chilli powder, Bag of Nacho's and a block of Cheese

    Stuff you do:

    * Fry the onions and garlic in some red wine
    * Chop up peppers, drop them in
    * Diddo with the tomatos
    * Diddo with the beans and tomato paste
    * Stir for a while
    * Add 2 tsp Soy sauce / black pepper (to taste)
    * Add 1/2 Table Spoon of Chilli Power
    * Stir some more for 40 minutes

    Then the interesting part, put some nacho's on a plate and serve the Bean Chilli on top with some grated cheese.. thank you thesite, you've been a wonderful audience :p

    ... and not forgetting you can make some interesting side dishes:

    Tomato and Onion Salad:

    * Chop up some tomatos and onions - put in a dish
    * Get some Balsonic Vinegar, pour it over
    * Spinkle on some herbs
    * Serve

    or theres always my favourite:

    Exotic Salad:

    * Lettuce, Tomatos, Cucumbers, Celery, Spring Onion, Grapes, Apple
    * Chop everything up and mix in a bowel
    * Add your favourite French/Italian Dressing
    * Serve

    ... more traditional would be a starter of breadsticks and dips!

    Another thing I was shown which rules:

    Baked Potatos and Cheese:

    * Potatos, Mayonaise, Cheese, Yogart/Sour Cream (your choice)
    * Stick the potatos in the microwave and heat for 5 minutes
    * Scoop out potato inside and place in a bowel
    * Add Yogart/Sour cream and some mayonaise
    * Stir and add back to the potato skins
    * Spinkle on some grated cheese
    * Place in the oven and wait for cheese to melt/turn golden brown

    Best Ever Rum Cake

    Best Ever Rum Cake


    1 or 2 qts rum
    1 tsp. sugar
    2 c. dried fruit
    1 tsp. soda
    Brown sugar
    1 c. butter
    2 lrg. eggs
    Baking powder
    Lemon juice
    Nuts

    Before you start, sample the rum to check for quality. Good isn't it! Now go ahead, select a large mixing bowl, measuring cup, etc. Check the rum again. It must be just right. To be sure rum is of highest quality, pour 1 level cup of rum into glass and drink as fast as you can. Repeat. With an electric mixer, beat 1 cup butter in a large fluffy bowl. Add a seaspoon of tugar and beat again. Try snother cup. Open second bottle if necessary.

    Add two orge laggs, 2 cups fried druit, and beat until high. If the druit gets stuck in the beater, just pry it loose with a srewumdriver. Sample the rum agin, checking for toncestcity. Next sift 3 cups baking powder, a pinch or rum, a steaspoon of toda, and a cup of salt or pepper (it really doesn't matter). Shample the bum agian. Sift 9/2 pints of lemin juice.

    Fold in schlopped butter and strained nuts. Add 1 bablespoon of brown sugar, or whatever color you can find. Wix mell. Grease the oven and turn turn cake pan to 300 gredees. Schmeells goo. (ead you hartout Aunt B!)

    I'd like to second Justin's potato recipe.... fockin' amazing, don't think I've ever like potatoes quite as much as when they're prepared like that.

    Oh, I and I've always been a fan of sauteed asparagus... dunno if you can still find asparagus this time of year (I'm a hopeless grocery shopper), but all you do is either melt some butter or pour a bit of olive oil into the pan, turn the heat up nicely, throw in the asparagus, wait for it begin to turn dark (if you can figure that out from typed words), flip it, wait for the other side to be done, remove from pan, spinkle chopped almonds over and serve... they're awesome (with twice-backed potatos *g*).

    I think that was confusing enough. My work here is done.

    Okay. Well whenever I want easy and special, I go for my own lovely meal that I like to call "potato thing with stuff in". You will require

    Cheese (Some, sliced)
    Potato (About 4 or so per person, depending on size of potato and person, peeled and sliced)
    Tomato sauce (a small amount)
    Egg (about four, opened and stirred)
    Corned Beef (One tin)
    Milk (tiny bit)

    And a loaf tin to bake it all in.

    You then get the potato and parboil it. (This means, cook it a bit)
    Then empty it out.
    Now, arange the potato, cheese and corned beef in layers into the loaf tin. After each layer, pour some of the egg on top.
    Repeat layering until tin is fullish.

    Cover with cheese

    Pour a tiny bit of milk over the stuff in the tin

    Cover the tin with foil, and stick it in your oven on a medium heat for about 30 mins. Then take the foil off for about 10 mins. Then serve it.

    It'll be bloody hot but it's quite nice.

    unsliced loaf. slice into 1inch thick doorsteps. buutter excessively.
    stuff with red hot chips. sprinkle with salt and vinegar.
    bite and the butter will run all down your front! delightful and very basic.

    I am eternally happy for your help (not the nasty comments@Mist :p), and want to thank you all.

    Though, thank god, I got my ass saved and we won't have it here, so the recipes won't get used tomorrow, but I do think that they will, next time I'm abandoned and feel for something non-McD-ish...
