The fastest dissolving protein is whey protein, there are a million powders out there and pretty much all of them are bland but do the job, my favorite (and the cheapest) is 90+ Protein.
The second fastest dissolving is egg whites, and it is a good idea to use only 1 egg yolk when having whites if you need to keep fat and cholesterol down, although there is as much protein in a yolk as the white.
The best meats if you want protein content with 0-2% fat content are chicken and turkey, fish is good to eat as well, especially mackerel.
If you are after high protein generally you have to be ready to eat in a strict (and expensive) way, ideally you want something like:
Breakfast: scrambled eggs made with 1 yolk and 2 egg whites
Lunch: Protein shake, and something like a chicken or turkey sandwich on wholemeal bread or a bagel - it is funny how much protein is in a bagel. Nearly as funny as the calorie content!
Dinner: Chicken or fish or just about any kind of meat and rice or pasta, keep it wholemeal, or a baked potato, simple carbs.
Snacks: Fruit, cottage cheese, more fruit
