can you prepare veggies the night before? as in, potatoes, parsnips, sprouts, carrots, etc? will they be ok if i put them in pans of water, cover them and put them in the fridge?
i am hosting my first christmas tomorrow and i am wondering whether i can get half of it done tonight! don't fancy being tied up in the kitchen all day tomorrow!

Rest - Prepare and keep covered.
Don't cover raw veg with/enclose in plastic. Makes them sweat and they can taste a bit off.
You can cook some veg the night before, but as you'd then have to reheat it anyway why bother ? If you want to, drop into boiling water for roughly half the cooking time then blanche by draining and dropping into ICED cold water. drain again and keep in the fridge.
DO NOT do this to potatos, they'll probably go black
