Banana Cake!

When we lived down south I remember eating the MOST amazing banana cake in the world. I can't remember if we bought it, but I've got a feeling someone we knew made it.

Anyway,

any cake experts I am looking for a recipie to dabble with...

something with not a million stupid ingrediants like a quater of teaspoon of this and a quater of a teaspoon of that! I hate recipies like that so yeah, something easy and straight forward!

    id be interested to know too so i can make it!! .. when im not on my diet of course :D

    I use a normal cake loaf recipe with 3 bananas (old and mashed) and chocolate chips, and it's great.

    I don't have the recipe on me right now but Nigella Lawson has an amazing one in "How To Be A Domestic Goddess", its a simple, virtually fail-safe one. all I remember off the top of my head is that it starts with you having to boil raisins in bourbon, cool and then leave to soak for an hour...mmmmmmmmmmmmmmm........

    BANANA AND SULTANA CAKE
    Per 50g serving - 100kcal/0.4g fat

    1lb 3 oz (475g ) ripe bananas (approximately 5 large) peeled.
    2 beaten eggs
    6oz (150g) brown sugar
    4oz (100g) sultanas
    8 oz (200g) self-raising flour

    Mash the bananas and add the eggs, sugar and sultanas. Mix well, then stir in the flour. Place in a lined 2lb (800g) loaf or cake tin. Bake for 1 hour and 15 minutes in a pre-heated oven at 180c, 350F or Gas Mark 4. Remove from the oven and leave to cool. When cool, store in an air-tight tin for 24 hours before serving


    This is a lovely, moist and low fat cake. :yum:

    I weigh the eggs (not sure what you'd do for this, Namaste) and use same amount flour, butter/non-dairy spread and sugar. Don't forget baking powder if you use plain flour.

    Works every time for me :)
