Cheap chicken dinners

Its not porn, I swear!

Have some leftover chicken, so does anybody have any recipes that involve chicken that are cheap and/or contain not a whole lot of ingrediants. And not just chicken with a side dish :p And not chicken fettucini alfredo either as thats what I just had. I'm so picky ;)

    how about a jar of curry sauce (dansak/rogan josh, whatever), which rice and a naan?

    easy, fatty, spicy, and well nice.

    I don't know what any of those ingrediants are :p Well, except rice

    I like the idea of sandwiches but the man doesn't.

    I'm trying to make up for the fact that I won't be able to take us out to eat anymore by cooking (though extremly cheaply) but I can't even cook a frozen pizza and am just having a real doozy here trying to think of anything.

    chicken nuggets - all you'll need is an egg, flour and breadcrumbs :p

    or if you want to be adventurous chicken kiev with garlic butter (same as above but add some buuter, garlic and parsley)

    If I have about 1/2lb of chicken (already bonless and skinless) how many eggs would be needed? And then just put enough flour into it to make it like a paste?

    Roll in the bread crumbs, stick in the oven and bake?

    chop the chicken up, roll in flour (50g should be enough), then coat with egg (2 eggs beaten should be enough) and then roll in breadcrumbs. Then you can either fry them or bake them. tadaaaa :)

    also dont forget to season the breadcumbs if they are the plain ones (salt and pepper will do the trick but feel free to add anything else)

    Chicken and sweetcorn pie, chicken and mushroom pie. Mmmmm pie !

    On a side note, i made stuffed chicken breasts wrapped in bacon (which ive not done before) last night. They were rather nice apparently. :)

    Hell yeah. I love stuffed chicken breasts wrapped in bacon, I haven't made them for ages :yum:

    But yes. Pie is easy and good with chicken, I currently favour chicken and leek or chicken and asparagus.

    Funnily enough i'd already decided to have a go at making it for Leigh, then i saw some guy make 'em on Come Dine With Me on More 4 so picked up the trick of laying the bacon down on foil first :) I did mine with parmesan, cheddar, onion and basil.

    I love Come Dine With Me! I get lots of ideas from there. How do you mean laying the bacon down on foil first? I may have to experiment with this :chin:

    Take a piece of tin foil. Put on it 3 rashers of bacon and arrange them so they fit in together to make a sheet of bacon. Put the chicken breast in the centre of the bacon, open side up. Pull up one side of the foil and fold ends of bacon over the open side of the breast then do the same with the other side then wrap up in the foil and scrunch up the ends and place on a baking tray with the open side downwards.

    I cooked mine for 35 minutes at 200c, and for the last 10 minutes i took it out of the foil and put the oven up to 230c so the bacon crisped up, as it looks a bit insipid otherwise. You could do the same with Pancetta, but as thats really thin it'd only need 5 minutes maximum (i'd guess) to crisp up out of the foil.

    It's really easy to do and looks quite impressive and skill worthy :)

    Don't buy a ready made sauce please! If you are looking for convenience then go for the Swchartz Chicken Chasseur packet mix, it's delicious and one of the few rare home made tasting sauces.
    Or you could go for a tomato based curry, fry some onions, coriander, madras curry powder (or any spice/curry powder you fancy and chillis (add to taste). When onions are softening add the chicken. Add a few tins of tomatoes, some fresh as well if you like. Cook on a moderately high temp for about 30 mins until it thickens and reduces into a nice sauce. You'll need to stir this frequently.
    You can also cooke it on a lower heat and adjust the time accordingly, I don't find it makes a difference though.
    The best way to make a curry though is to treat it like a stew (I usually do this with red meat though). Either stew in the oven on a really low heat for 4 hours or stick it in a slow cooker. My fave indian restaurant slow cooks all of their currys for 4 hours and it's devine.
    If you don't like spicey, chicken stews and soups are lovely, easy and cheap. There's loads of recipes online, I like Delia Smith's cooking :yum:

    I made the chicken nuggets though, with some flavor. Oh they were so good thank you so much for the idea!

    Marinated the chicken in extra virgin olive oil, garlic and pepper. Mixed bread crumbs, garlic powder, oregeno, basil and pepper together, baked for a bit, then rolled the chicken in it and baked.

    I can cook!!! It didn't burn, it didn't taste like crap... its so exciting!

    The quesidillas and stir fry sound delicious too, I may have to get some more :D
    What vegies and sauce do you like in your stir fry?

    What kinds of things do you guys like stuffed in chicken? Please tell me something with cheese :yum:
